Citrus Quinoa Fresh Salad

Ingredients

• 1 cup cooked quinoa (cooled)

• 1/2 cup diced cucumber

• 1/2 cup orange segments

• 1/4 cup diced red bell pepper

• 1 tbsp olive oil

• 1 tbsp chopped fresh mint

• Salt and black pepper to taste


Method

In a large bowl, combine cooked quinoa, cucumber, orange segments, and red bell pepper.

Drizzle with olive oil and lemon juice.

Add chopped mint and mix gently.

Season with salt and black pepper.

Serve chilled or at room temperature.
